Use thin, budget-friendly top sirloin steaks for their excellent flavor and texture. The steaks are marinated and then quickly fried with onions.

I like top sirloin because, even though it’s firmer than more pricey cuts like ribeye and tenderloin, the flavor is excellent and it’s easy on the budget. A marinade helps to tenderize these steaks.

Ingredients

  • 1 1/2 pound top sirloin steaks
  • 2 tablespoons lemon juice
  • 1/4 cup soy sauce
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon granulated sugar
  • 2 cloves garlic, finely minced
  • 2 tablespoons olive oil or vegetable oil
  • 2 medium sweet onions, sliced
  • chopped cilantro or parsley, for garnish, optional

Instructions

  1. Put the steaks in a plastic food storage bag or nonreactive container. Add the lemon juice, soy sauce, pepper, sugar, and garlic. Mix well to coat the beef.
  2. Cover and refrigerate the steaks for 30 minutes to 1 hour.
  3. Heat half of the oil in a large skillet over medium heat. Fry the sliced onion until softened and lightly browned, about 8 to 12 minutes. Remove the onions to a plate and set aside.
  4. Add the remaining oil to the skillet. Remove the steaks from the marinade; set the marinade aside. Cook the steaks until nicely browned on one side, about 2 to 3 minutes. Turn the steaks and cook for another 2 to 3 minutes or until the steaks are browned.
  5. Add the onions and reserved marinade to the skillet with the steaks and bring to a boil. Reduce heat to medium-low and simmer for 2 minutes.
  6. Serve the steaks with the sauce mixture and garnish with parsley if desired.
