This mashed cauliflower is an excellent mashed potato replacement. It’s low in carbs and has a similar texture. I usually add garlic, but you can leave it out if you like. Keto-friendly cauliflower is as satisfying at mashed potatoes, when combined with cream, butter, and seasonings. I like to use a potato masher. However, if you like a smoother texture, use a food processor to mash the cooked cauliflower.

Ingredients

  • 1 large head of cauliflower
  • 2 cloves garlic, minced, optional
  • 3 tablespoons light or heavy cream
  • 2 tablespoons butter
  • salt and freshly ground black pepper

Instructions

  1. Trim the cauliflower and discard the leaves. Separate the florets and discard the tough stem. Put the cauliflower in a saucepan and cover with water; add the minced garlic, if using, and about 1/2 teaspoon of salt.
  2. Place the pan over high heat and bring the cauliflower to a boil. Cover the pan and reduce heat to medium-low. Continue boiling for about 15 minutes, or until the cauliflower is very tender. Drain well.
  3. Mash the cauliflower lightly with a potato masher and transfer it to a fine mesh strainer set over a bowl. Press the cauliflower with a large spoon or the bottom of a cup to press out as much moisture as possible.
  4. Put the cauliflower in a food processor with the cream and the butter. Process until smooth. Alternatively, use a potato masher for a coarser texture.
  5. Season with salt and freshly ground black pepper.
