Cucumber salsa features diced cucumbers, corn, tomatoes. Lime juice, vinegar, garlic, and cilantro add flavor to the fresh and zesty salsa. Jalapeño peppers are optional. How To Make Cucumber Salsa

  • Cucumbers are sometimes coated with a layer of edible wax, so you might want to peel them. If your cucumbers are from your garden or the local farmer’s market, there’s really no need to peel them. Cut the cukes in half lengthwise and scoop out the seeds with a spoon.
  • Dice the cucumber and tomatoes uniformly and combine them in a bowl with the corn, tomatoes, garlic, cilantro, green and red onion, jalapeño (if using), lime juice, and vinegar.
  • Toss the ingredients and taste; season with salt and pepper.
  • Cover the bowl and refrigerate the cucumber salsa until serving time.

  • 1 medium cucumber, seeds scooped out, diced
  • 3/4 cup corn kernels, fresh or frozen (thawed)
  • 2 small plum tomatoes, cores and seeds removed, diced
  • 1 small clove garlic, mashed and finely minced
  • 2 tablespoons chopped fresh cilantro
  • 1 green onion, thinly sliced
  • 1 tablespoon finely chopped red onion
  • 1 to 2 teaspoons finely diced jalapeno, or to taste, optional
  • juice of 1 lime, about 3 tablespoons
  • 1 tablespoon white or red wine vinegar
  • salt and pepper, to taste

Instructions

  1. Peel the cucumber, if desired. Cut the cucumber in half lengthwise and scoop the seeds out. Dice.
  2. In a bowl, combine the diced cucumber with the corn, diced tomatoes, garlic, cilantro, green and red onion, jalapeno pepper, lime juice, and vinegar. Taste and season with salt and pepper, as needed.
  3. Cover and refrigerate until serving time.
