Ingredients

  • 2 pounds sauerkraut, rinsed and drained
  • 2 pounds kielbasa, sliced into 1-inch pieces
  • 2 large tart apples, cored, peeled, thinly sliced
  • 1 medium onion, halved, thinly sliced
  • 1/2 cup apple juice or cider
  • 1/2 cup brown sugar, packed
  • 1 tablespoon whole grain mustard
  • 1 tablespoon caraway seeds, optional
  • kosher salt and freshly ground black pepper, to taste

Instructions

  1. Lightly grease the bottom and sides of the slow cooker.
  2. Combine the sauerkraut, smoked sausage, sliced apples, and onions in the slow cooker.
  3. In a bowl, combine the apple juice, brown sugar, mustard, caraway seeds, if using, and the salt and pepper. Pour over the sauerkraut and sausage mixture; stir to blend ingredients.
  4. Cover and cook on LOW for 5 to 7 hours (HIGH for about 3 hours).
