These soft, tasty, glazed applesauce cookies are endlessly adaptable. Add your choice of nuts, baking chips, or dried fruit. I sometimes add a little citrus flavor to the glaze with 1 teaspoon of orange zest.

How To Store Applesauce Cookies

  • Store applesauce cookies in an airtight container at room temperature for up to 5 days.
  • You can freeze these cookies for longer storage, but it’s best to leave them unglazed. Frost them just before serving.

Instructions

  1. Mix the flour, soda, spices, and salt; stir and set aside.
  2. In a mixing bowl with an electric mixer, cream the brown sugar and shortening until smooth; beat in the applesauce, egg, and 1 teaspoon of vanilla. Stir in the flour and spice mixture until well blended. Fold in the raisins, craisins or chopped nuts.
  3. Cover the bowl and refrigerate the cookie dough for 1 hour.
  4. Heat oven to 400 F.
  5. Line baking sheets with parchment paper or grease lightly.
  6. Drop the dough by rounded teaspoonfuls onto the baking sheets. Bake for about 8 to 10 minutes or until firm. Immediately remove the cookies to racks and let them cool.
  7. Ice the cooled cookies with the brown butter glaze (below).
  8. Heat the butter in a small saucepan over medium heat until the solids are lightly browned. Keep the butter from burning or getting too dark. Remove from the heat and stir in the confectioners’ sugar and 1 teaspoon of vanilla. Add enough 1 tablespoon of milk; stir and add more milk, as needed, to make a smooth glaze.
