Sweet Potatoes with Orange, Nuts and Sherry

  • 4 Cooked sweet potatoes
  • 1 tablespoon Cornstarch
  • 1/4 teaspoon Salt
  • 1 cup Orange juice
  • 1/4 cup Raisins
  • 1/4 cup Butter
  • 3 tablespoons Sherry
  • 2 tablespoons Chopped walnuts
  • 1/2 tablespoon Grated orange peel





Cut cooked sweet potatoes in lengthwise pieces. Mix potatoes with all remaining ingredients and place in a 1 1/2-quart casserole dish.
Cover and bake sweet potato casserole at 350° for 20 minutes or until hot and bubbly.
