Combine the vinaigrette ingredients in a blender or covered jar. Blend or shake for about 1 minute, or until smooth and well blended.
Arrange lettuce on serving plates. Arrange the tomatoes on the lettuce, then sprinkle generously with mozzarella cheese. Sprinkle basil over the cheese layer.
Just before serving, drizzle with vinaigrette.
