Heat oven to 350 F. Butter a 2-quart baking dish and set aside.
Break spaghetti into 3-inch lengths and cook following package directions. Drain and rinse with hot water.
Combine the drained spaghetti with 1 cup of the Cheddar cheese, half of the Parmesan cheese, the turkey or chicken, pimientos, onion, soup, broth, and sherry. Toss together and add salt and pepper, as needed. Transfer to the prepared baking dish
and sprinkle with remaining cheeses.
Cover tightly with foil and bake for
about 45 minutes, or until hot and bubbly.
