Turkey Tetrazzini

This turkey tetrazzini is a great way to use leftover turkey, or make it with diced cooked chicken. A purchased rotisserie chicken would make this a snap to prepare and bake! Serve with a tossed salad and biscuits or rolls for a super family meal.

Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes

Ingredients:

  • 8 ounces spaghetti
  • 1 1/2 cups grated Cheddar cheese, divided
  • 1/4 cup Parmesan cheese, divided
  • 2 1/2 to 3 cups diced cooked turkey or chicken
  • 2 tablespoons diced pimientos, if desired
  • 1/4 cup chopped onion
  • 1 can cream of mushroom soup
  • 1/2 cup chicken broth
  • 2 tablespoons dry sherry
  • salt and pepper, to taste

Instructions:

Heat oven to 350°. Butter a 2-quart baking dish and set aside.

Break spaghetti into 3-inch lengths and cook following package directions. Drain and rinse with hot water.

Combine the drained spaghetti with 1 cup of the Cheddar cheese, half of the Parmesan cheese, the turkey or chicken, pimientos, onion, soup, broth, and sherry. Toss together and add salt and pepper, as needed. Transfer to the prepared baking dish and sprinkle with remaining cheeses.

Cover tightly with foil and bake for about 45 minutes, or until hot and bubbly.
