Chicken Salad With Fresh Herbs

Chicken Salad Recipe
Make this delicious chicken salad for sandwiches or serve on lettuce for a fabulous warm weather lunch. I used herbs I had growing in flower pots on my back deck, a mixture of parsley, oregano, chives, and thyme, but feel free to use your own favorite herbs or what you have on hand.
Prep Time: 20 minutes
Total Time: 20 minutes
Ingredients:
- 2 cups chopped cooked chicken
- 2 tablespoons fresh finely chopped herbs*
- 2 tablespoons finely chopped red onion or sweet onion
- 1/4 cup finely chopped celery
- 1/4 to 1/2 cup mayonnaise
- 2 teaspoons fresh lemon juice
Instructions:
*I used a mixture of parsley, chives, oregano, and thyme.
Combine the chicken, herbs, onion, and celery; toss to blend. Add 1/4 mayonnaise along with lemon juice and salt and pepper, to taste. Add more mayonnaise, as needed.
Serves 4.
