Banana Cake With Crumb Topping

  • 1/2 cup butter
  • 1 1/3 cups sugar
  • 2 eggs, slightly beaten
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/3 cup buttermilk
  • 1 cup mashed banana
  • 1 teaspoon vanilla
Crumb Topping:
  • 1/3 cup crushed corn flakes
  • 1/4 cup sugar
  • 1 tablespoon butter
  • 1/4 cup chopped pecans or walnuts







In a mixing bowl, cream butter and sugar until light; add eggs and beat well. Sift together the flour, soda, salt, and nutmeg; stir into the creamed mixture. Stir in the buttermilk,, mashed banana, and vanilla. Spread batter in an 11x7-inch baking pan. Combine topping ingredients and sprinkle over top. Bake at 350° for 40 to 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
