Parslied New Potatoes
18 to 24 small new potatoes
3 tablespoons butter
2 tablespoons chopped parsley
New potato peels should be very thin, so there's no need to peel. Scrape as desired. Cook whole in boiling salted water until tender. Drain and shake over heat to dry. Add butter; toss then sprinkle with parsley.
