Macadamia nut cookies get their unique flavor from buttery rich macadamia nuts. Finely chopped nuts coat these tender little butter cookies. Macadamia nuts are called for, but feel free to substitute almonds, pecans, walnuts, or hazelnuts.

The finely chopped macadamia nuts are included in the cookie dough. The dough is shaped into small balls and rolled in more finely chopped macadamia nuts.

Ingredients

Scale
  • 2 cups all-purpose flour (9 ounces)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 teaspoons vanilla extract
  • 1 1/2 cups very finely chopped or ground macadamia nuts

Instructions

  1. Preheat the oven to 325 F.
  2. Lightly grease baking sheets or line with parchment paper.
  3. Sift flour, sugar, and salt together; work in butter and vanilla. Add 3/4 cup of finely chopped nuts; mix well.
  4. Shape dough into 1/2-inch balls.
  5. Roll the cookies in the remaining nuts and place on the prepared baking sheets. Alternatively, roll half of the cookies in nuts and leave half plain; roll plain cookies in powdered sugar when they have cooled.
  6. Bake for about 20 minutes, or until the cookies are lightly browned on the bottoms.
