Creole Wax Beans

  • 3 tablespoons butter
  • 2 tablespoons finely chopped onion
  • 1/4 cup finely chopped green pepper
  • 1 1/2 tablespoons flour
  • 1 1/2 cups tomato juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 cups cooked wax beans







In a skillet, melt butter over medium-low heat. Add onion and green pepper; cook until onion is yellow. Blend in flour, stirring until smooth. Gradually add tomato juice; continue cooking for 5 minutes. Add salt, pepper, and wax beans. Heat through. Wax beans recipe serves 6 to 8.
