Quick and Easy Ham and Potato Dinner

  • 1 box (approx. 6 ounces) au gratin potato mix
  • milk, as directed on au gratin potato mix
  • 4 hard cooked eggs, chopped
  • 1 cup chopped cooked ham
  • 1 cup frozen English peas







Cook potatoes in microwave with milk and sauce packet, following package directions. Stir in eggs, ham, and peas. Cover with plastic wrap, venting slightly. Microwave on HIGH, stirring occasionally, until heated through, about 6 to 8 minutes. Let stand for a few minutes before serving. Serves 4.
