Ingredients

Scale
  • 2 tablespoons butter
  • 2 tablespoons minced shallot
  • 2 tablespoons flour
  • 1 cup milk (or half-and-half)
  • 1 cup cooked lobster meat (about 8 ounces)
  • Salt and pepper, to taste
  • Parmesan cheese, optional, for garnish
  • Parsley, optional, for garnish

Instructions

  1. Melt the butter in a skillet over medium-low heat.
  2. Add the minced shallots to the butter and cook for 2 minutes.
  3. Add the flour; cook while stirring for 2 minutes.
  4. Gradually add the milk to the roux and continue cooking, stirring constantly, until thickened.
  5. Taste and season with salt and pepper.
  6. Add the lobster and cook just long enough to heat through.
  7. Serve over rice, toast points, biscuits, or puff pastry shells.
  8. Garnish with shredded Parmesan cheese and parsley if desired.
