Light and Easy Poached Salmon

For a light and easy meal, serve this flavorful poached salmon with rice or baked potatoes, along with steamed broccoli or a tossed salad.

- In a large deep skillet, combine the water, sliced lemon, green onions, salt, and pepper. Bring the water to a boil; reduce heat to low and simmer for 5 minutes.
- Add the salmon to the simmering water. Cover and simmer for 7 to 10 minutes, until the salmon flakes easily with a fork.
- Carefully remove the salmon with a slotted spoon and arrange on a serving platter.
- Sprinkle with chopped dill, if desired, and surround with several lemon wedges.
