Chicken sliders are fun to make and even more fun to eat! Hawaiian rolls are a filled complementary combination of chicken, bacon, and cheese. I use a simple Sriracha mayo combination to add a spicy flavor, and slaw or pickled onions for a tangy topping. If you like a less flavor, use cheddar cheese or cheddar jack instead of the pepper jack cheese.

Ingredients

  • Bread: King’s Hawaiian rolls are traditional, but any flat of soft, connected rolls will work in this recipe.
  • Bacon: Use thick or regular bacon. I usually cook my bacon in the oven.
  • Chicken: Use a rotisserie chicken, poached chicken breast, or shredded chicken.
  • Cheese: Pepper jack gives the sliders a little extra zing. Feel free to use plain cheddar cheese, Gruyère, or cheddar jack. Any melty cheese will work in these little sandwiches.
  • Spread: Mayonnaise or a combination of mayonnaise and Sriracha (my favorite combo). You could also add garlic powder or sambal to the mayo. For chicken bacon ranch sliders, use ranch dressing!
  • Toppings: Slaw or pickled onions are great choices, or you might use pickled peppers or sliced tomatoes.

Ingredients

  • 1 flat of connected dinner rolls, such as King’s Hawaiian
  • 1/4 cup mayonnaise
  • 1/2 to 1 teaspoon Sriracha, optional
  • 1 1/2 cups chopped or sliced cooked chicken breast
  • 6 strips bacon, cooked and diced or crumbled
  • Coleslaw or quick pickled onions, or use store-bought slaw or mild or hot pickled peppers
  • 1 cup (4 ounces) pepper jack cheese or plain cheddar
  • 2 tablespoons melted butter combined with a dash of garlic powder

Instructions

  1. Heat the oven to 375 F
  2. Spray a large sheet of heavy-duty foil with nonstick cooking spray.
  3. Carefully slice the rolls in half horizontally.
  4. Place the bottom of the rolls on the prepared foil and set the top aside. Gently cut almost through the bottoms so they may be separated easily when they’re done.
  5. In a small bowl, combine the mayonnaise and Sriracha, if using. Spread over the rolls.
  6. Top the mayonnaise with chicken, and then the bacon.
  7. Top the bacon with about 2 teaspoons of slaw. Alternatively, top the slider squares some pickled onion or chile pepper.
  8. Sprinkle the pepper jack or cheddar cheese over all.
  9. Place the top of the rolls over the cheese layer.
  10. Brush the tops with the melted butter and garlic salt mixture.
  11. Bring the sides up over the rolls and seal. Crimp the ends together to seal.
  12. Place the foil package on a baking sheet and bake for 20 minutes. Open the top of the foil and continue baking for 5 minutes.
