Honeyed Chicken and Sweet Potatoes
In this one dish meal, chicken breasts are baked in a creamy honey and spice sauce with sweet potatoes.

Ingredients:
- 4 large sweet potatoes
- 4 chicken breast halves, boned
- 1 cup heavy cream
- 2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- pinch ground cloves
- 2 tablespoons butter
Instructions:
In a large saucepan, cover unpeeled sweet potatoes with water and bring to a boil. Boil for 20 minutes. Cool slightly and slip off skins.
Arrange chicken breasts, skin side up, in a shallow baking dish.
Combine the cream, honey salt and spices and pour over chicken. Dot
with
butter.
Bake 30 minutes at 350F, basting with cream mixture. Remove
from
oven and arrange sweet potatoes around chicken.
Return to oven
and bake for
30 minutes longer or until chicken is fork tender.
