Statesborough Meatloaf

- 1 1/2 tablespoons Vegetable oil
- 1 md Onion -- chopped
- 3 md Garlic cloves -- crushed
- 2 pounds Lean ground beef
- 2 teaspoons Salt
- 1 teaspoon Black pepper
- 2 Eggs -- beaten
- 3/4 cup V-8 juice
- 1/2 cup Fresh parsley -- chopped
- 1 tablespoon Bottled Caribbean-style hot sauce
- 1 cup Fresh breadcrumbs
Preheat oven to 350~. Heat the oil in a skillet and saute onion
until translucent, about 5 mins. Add garlic and saute one minute.
Transfer the onion and garlic into a lg. mixing bowl and add the
beef, salt, black pepper, eggs, juice, parsley, and sauce. Mix
well. Oil a 12"x8"x2" pan and pour in mixture,
molding it into a loaf. Sprinkle the top w/breadcrumbs and bake
for on hour.
