Chili Meatloaf & Potato Casserole

Meatloaf:
  • 1 1/2 to 2 pounds Lean ground beef
  • 3/4 cup Finely chopped onion
  • 1/3 cup Cracker crumbs
  • 1 Egg, lightly beaten
  • 3 tablespoons Milk
  • 1 tablespoon Chili powder
  • 3/4 teaspoon Salt
Topping:
  • 3 cups Mashed potatoes
  • 1 can (11 oz) kernel corn with red and green peppers, drained
  • 1/4 cup Thinly sliced green onions
  • 1/2 to 1 cup shredded cheese, Mexican-style







Preheat oven to 375°. In a large bowl, combine meat loaf ingredients, mixing gently but thoroughly; gently press into bottom of a 9-inch square baking dish. Bake for 20-30 minutes or until no longer pink. Pour off drippings.

In a medium bowl combine all topping ingredients except cheese. Spread over meat loaf to edges of pan; sprinkle with cheese. Broil 3-4 inches from heat for 3-6 minutes, or until top is lightly browned.
Serves 6 to 8.
