Meatloaf is one of my favorite comfort food, and it’s always a good bet for family meals. This meatloaf blend is a basic combination of ground beef and breadcrumbs along with some mustard, ketchup, and chopped onion and bell pepper for extra color and flavor. Meatloaf is easily customized with other ingredients. Add spicy peppers or seasonings, top it with bacon, or add shredded or grated cheese to the mixture.

Recipe Tips

  • For the most flavorful meatloaf, use ground beef that is no leaner than 85 percent.
  • A meatloaf pan with a perforated inner pan is a good investment if you make meatloaf often. The excess fat drips into the outer pan.

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup bread crumbs (soft, finely ground)
  • 1 large egg (beaten)
  • 3/4 cup ketchup (divided)
  • 2 teaspoons Dijon mustard
  • 1/2 cup finely chopped sweet onion
  • 1/4 cup finely chopped red bell pepper
  • 1 1/2 teaspoons seasoning salt blend
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano

Instructions

  1. Heat the oven to 350 F.
  2. In a large bowl, combine the ground beef with the bread crumbs, beaten egg, 1/2 cup of ketchup, mustard, onion and peppers, salt, pepper, and oregano. Mix until thoroughly blended.
  3. Pack the beef mixture into a meatloaf pan or a 9-by-5-by-3-inch loaf pan.
  4. Bake the meatloaf for 1 hour. Spread the remaining 1/4 cup of ketchup over the loaf and bake for about 10 to 15 minutes longer. The meatloaf is ready when it reaches 160 F (165 F if there is poultry in the meat mixture).
