Mississippi Fried Oysters

These basic fried oysters are delicious with tartar sauce, remoulade, or a cocktail sauce. Enjoy with fries or use the fried oysters to fill a po' boy.

- Heat the oil in a deep, heavy skillet or deep-fryer to 370 F.
- Meanwhile, drain the oysters and add them to the beaten eggs. Let stand for 10 minutes.
- In another bowl combine the cornmeal, sugar, salt, pepper, and flour.
- Dip the oysters in the cornmeal mixture and fry them in batches in the hot oil until golden brown.
- Drain on paper towels.
