Broiled Pond Catfish Fillets

- 6 catfish fillets
- lemon pepper
- garlic powder
- red pepper
- black pepper
- 1/3 cup butter or margarine
- 1 tablespoon parsley -- minced
- 1/3 cup chopped green onions
- 1/2 pound shrimp, seasoned w/salt & pepper -- chopped
- 1 cup crabmeat
- 1 1/2 cups bread crumbs -- diced
- 2 to 3 Tb chicken broth
- 1 tablespoon dry white wine
- melted butter
- lemon juice
Sauce:
- 1/2 cup butter -- melted
- juice of one lemon
- 1 tablespoon parsley -- finely chopped
- 1/8 teaspoon garlic powder
Rinse and dry fillets. Season with lemon pepper, garlic powder,
red and
black pepper. Set aside.
Melt butter in saucepan. Add parsley
and green
onions. Saute 2-3 minutes. Add seasoned shrimp, cook until pink.
Add
crabmeat and bread crumbs. Add chicken broth and wine to moisten
mixture.
Place fillets in pan lined with foil. Broil in preheated broiler

minutes. Turn fillets over. Baste with butter and lemon juice.
Spread
dressing over each fillet and broil 5 minutes longer.
Mix butter, lemon juice, parsley and garlic powder together. Warm
and
serve sauce with broiled catfish.
