Baked Shrimp with Cocktail Sauce
Simple baked shrimp is served with a chilled cocktail sauce made with chili sauce and mayonnaise.
- 2 eggs, slightly beaten
- 1/4 cup water
- 2 cups shrimp, shelled and deveined
- 2 cups fine dry bread crumbs
- oil
- salt to taste
- pepper to taste
Sauce
- 1 cup chili sauce
- 1 cup mayonnaise
- 1/4 cup pickle relish
- 1 hard cooked egg, chopped
- 1/2 teaspoon prepared mustard, brown or your favorite
- 1 teaspoon grated onion
- 1 tablespoon lemon juice
To make shrimp:
Beat eggs slightly with water. Dry shrimp on paper towels; dip first into crumbs, then eggs, then into
crumbs again.
Place shrimp in well-oiled shallow baking pan so they do not touch;
sprinkle with salt and pepper.
Turn once with a broad spatula so that both sides are oiled.
Bake in preheated 450° oven 6 to 8 minutes. Serve with Shrimp Sauce
or your favorite sauce.
To make sauce:
Combine all sauce ingredients; chill. Serve sauce with baked or broiled shrimp.
