Correro's Red Beans and Rice
Recipe By : Telephone Pioneers (Bell's Best #2) - Mississippi
- 1 pound dried red beans -- soaked overnight
- 1 meaty ham bone
- 2 large onions -- chopped
- 1 bell pepper -- chopped
- 2 ribs celery -- chopped
- 1/4 cup parsley -- chopped
- 2 cloves garlic -- finely chopped
- salt and pepper -- to taste
- pinch sugar
- bay leaf
- 2 pounds sausage links -- your choice
Combine all except parsley and cook until beans are done. Serve
over rice. Add parsley just before serving.
Variation: Omit ham bone and sausage and use a center slice of
ham, cut in small pieces.
