Correro's Red Beans and Rice

Recipe By : Telephone Pioneers (Bell's Best #2) - Mississippi

  • 1 pound dried red beans -- soaked overnight
  • 1 meaty ham bone
  • 2 large onions -- chopped
  • 1 bell pepper -- chopped
  • 2 ribs celery -- chopped
  • 1/4 cup parsley -- chopped
  • 2 cloves garlic -- finely chopped
  • salt and pepper -- to taste
  • pinch sugar
  • bay leaf
  • 2 pounds sausage links -- your choice







Combine all except parsley and cook until beans are done. Serve over rice. Add parsley just before serving.
Variation: Omit ham bone and sausage and use a center slice of ham, cut in small pieces.
